CAIPIRINHA

INGREDIENTS: 2 heaping teaspoons brown sugar 1 measure cachaca 1, cut into six segments lime(s) DIRECTIONS Add the brown sugar to a traditional stout glass, then add the lime segments and crush them to squeeze the juice into the mixture, leaving the pieces in when finished. Fill the glass with crushed ice, and finally add the cachaca, one measure or to taste. The trouble you go to for this cocktail is more than worth it, and in fact becomes part of the ritual of what is practically Brazil's national drink!

BLUE CAPRITA

INGREDIENTS: 75 ml cachaca 25 ml Blue Curacao 50 ml lime juice 4 - 6 ice cubes DIRECTIONS Rub rim of chilled cocktail glass with lime wedge and dip in to sugar. Put cracked ice cubes in shaker with the Cachaça, Blue Curaçao and lime juice. Shake well. Strain into prepared glass and decorate with lime twist. caipirinha meets margarita

BERRY CAPIRINHA

INGREDIENTS: 12 counts cachaca 1 Lime Wedges 4 tbs sugar 5-6 blackberries DIRECTIONS Mottle the sugar and lime slices together in a pint glass until the juice from the limes and the sugar form a syrupy texture. If the solution looks watery, add more sugar, but don't overdo it. Leave the lime slices intact in the glass. Add the berries into the mixture and mottle again until the berries have be crushed into tiny pieces, but don't pulverize the mixture into a mash. Add the cachaca into the glass, and be generous in your application. Add ice until it fills nearly to the top of the glass. Cover the pint glass with a shaker and shake well. Enjoy the drink throughout the evening. This is my favorite drink for the summer, hands down. You can substitute it for any white rum, but really only out of necessity.
