DEAD MAN'S MULE

INGREDIENTS: 1 shot absinthe 1 shot goldschlager 3/4 shot Orgeat 3/4 shot lime juice To top ginger beer Garnish Lime Wedges DIRECTIONS Use a collins glass. Shake and strain first four ingredients. Then top with ginger beer. Very strong flavours of aniseed, cinnamon, and ginger all twisted together with almond. If substituting the Orgeat for Gomme, Flavours will be stronger but will not compliment each other so much. Very easy to drink cocktail with a bit of a kick.

Fill the glass with cracked ice then add the rum, and ginger beer. Put the 5 dashes of bitters in the top of the drink and finish off with a wedge of lime and a straw.

DARK 'N' STORMY

INGREDIENTS: dark rum ginger beer Lime Wedges DIRECTIONS Put ice and lime into a tall glass. Squash lime wedge to release some juice. Pour rum and ginger beer into glass and stir.

COCKLE WARMER

INGREDIENTS: 75ml Captain Morgan's Rum 200ml ginger ale 2 Lime Wedges DIRECTIONS Pour ingredients into collins glass, squeeze in lime wedges, stir. pour into seperate collins glass over crushed ice. garnish with lime wedge

CEASAR

INGREDIENTS: 2oz vodka 6oz Mott's Clamato Juice (Extra Spicy) 3 dashes Worcestershire sauce 3 dashes tabasco sauce 1 Celery Stalk 1 Lime Wedges DIRECTIONS Rim a tall cocktail glass with the lime wedge and then Celery salt, fill with ice. Pour in Vodka and Clamato juice. Add 3 dashes each of Worcestershire and Tabasco sauce. Garnish with crisp Celery stalk and Lime wedge. Sometimes referred to as a "Bloody Ceasar", the Ceasar was created in Canada and apparently remains predminantly a Canadian drink. Although the drink is similar to a "Bloody Mary", the Clamato juice gives it a completely (and much better) taste. Seafood restaurants in Canada often add a Shrimp or Prawn as an additional garnish.

BERRY CAPIRINHA

INGREDIENTS: 12 counts cachaca 1 Lime Wedges 4 tbs sugar 5-6 blackberries DIRECTIONS Mottle the sugar and lime slices together in a pint glass until the juice from the limes and the sugar form a syrupy texture. If the solution looks watery, add more sugar, but don't overdo it. Leave the lime slices intact in the glass. Add the berries into the mixture and mottle again until the berries have be crushed into tiny pieces, but don't pulverize the mixture into a mash. Add the cachaca into the glass, and be generous in your application. Add ice until it fills nearly to the top of the glass. Cover the pint glass with a shaker and shake well. Enjoy the drink throughout the evening. This is my favorite drink for the summer, hands down. You can substitute it for any white rum, but really only out of necessity.
